He said, “I was a chef at the Ritz Carlton.”

And now his days are spent in a wheelchair, a motorized one at that. He does not have the strength to use his hands. And he is young, too. Much too young to be living in a wheelchair in a nursing home. And how do I know about his past career.
I asked who prefers baking to cooking? What would you prepare at your house if you invited us all to come for dinner?

The answers were typical meals: roast beef, spaghetti, steak, ham and turkey with all of the fixings. Then I asked about desserts.

Matt said, “Poached Apples, Hot Buttered Rum Sauce, and Brown Butter Pecan Ice Cream>”

Huh?

And his answer was something like this! (I checked the recipe on-line because is sounded so yummy.)

“Here is a beautiful dessert for fall or winter that will fill your house with the aroma of holiday spices. Braeburn apples are poached in a cider rum sauce with cloves, cinnamon, nutmeg, orange zest and crystallized ginger. Add vanilla or brown butter pecan ice cream and your family or guests will be in heaven.”

Ronnie said that his brother is the head chef at the White House.
